The number of hood systems, approximate hood length, filter quantity, plenum size, duct route, and fan count shape labor and setup.
Two kitchens with the same hood length may differ because one has a short direct duct and the other has a long route with several access points.
Grease condition and cooking operation
Heavy buildup can require more scraping, chemical dwell time, rinsing, containment, and cleanup. Frying, charbroiling, solid-fuel cooking, long operating hours, and overdue service can change the scope.

Access and site logistics
