How to Prepare a Commercial Kitchen for Hood Cleaning
Good preparation protects food, equipment, staff time, and the service window. Follow the selected provider's written instructions because every kitchen and cleaning method differs.

Before the appointment
Confirm the date, arrival window, scope, systems, provider contact, building access, roof access, alarms, parking, and expected completion time.
Provide current photos and disclose recent equipment, menu, ownership, or construction changes.

Stop cooking with enough time for equipment and exhaust components to cool. Remove or secure exposed food, smallwares, paper products, and portable items as directed.
Do not move gas, electrical, plumbed, or heavy equipment unless the provider and an appropriate trade have agreed on the method.
Access and contacts
Arrange keys, doors, elevators, loading areas, roof hatches, ladders, lighting, and security procedures. Provide a contact who can make decisions if actual conditions differ from the quote.
Tell the crew about restricted areas, sensitive equipment, sprinkler or alarm procedures, tenant rules, and noise limits.
Reopening
Confirm that surfaces are dry, equipment and filters are returned as agreed, the fan is operating as expected, documentation is available, and unresolved conditions are understood.
Keep the service report and update the internal maintenance calendar.
